Moms who work & Spicy Baked Sweet Potato Chips ( Vegan, Gluten-free)

Conversation with someone I had met – And just to clarify the tone, she was not judgemental, simply curious.

She – Do you get good projects that allow you to work from home ? 
Me – Sometimes. Not too many.

She – Why do you work with small kids ?
Me – Because I love my work.

She – When it’s so difficult and companies don’t give you that opportunity because you can’t come into office each day, why do you continue to apply ?
Me – Because I believe that sometimes in that bunch of organisations, there are those rare few who value performance over physical presence. And they don’t judge my ambition level based on the fact that I am a mother of two kids. And they don’t worry that I am not in my ‘early 30s’ and use age as a barometer.

While I said those words aloud for the first time, it is what I tell myself each day. Every single day. Day after day. Surviving as a mother who wants to work from home and not take a complete break is not just a decision. It is a journey of optimism you take each day.

And that is the journey I choose to make. Of course, being a working mother has its challenges such as trying to find some quick yet nutritious snacks that the kids can munch on readily – Like these super easy Sweet Potato Chips.

Ingredients –

2 Sweet Potatoes, scrubbed, peeled and sliced thin

Salt , Paprika , thyme – as per taste

1-2 Crushed Garlic Pods

1-2 tbsp Oil for drizzling

Method –

Add the garlic pods ( crushed ) in oil for 10-15 minutes. Put the slices of sweet potato onto the baking tray. Sprinkle the salt and paprika. Brush the slices with the oil. Bake in a preheated oven for 15 minutes at 175-180 degrees C or until they crisp up.
