Shift to healthy baking & Wholewheat Oats Date & Walnut cookies

A lot of bakers ask me about how to shift to healthy baking. Well, the shift in terms of using healthier ingredients is perhaps easier than the shift in mindset! And working on both simultaneously is the key.

And also here is an easy recipe to start with – the Wholewheat Oats Date and Walnut Cookies. Without baking powder or soda.

Recipe –

1 cup wholewheat flour

1/2 cup oats ( dry roasted and the coarsely ground)

3/4 cup organic jaggery powder

4-5 tbsp ghee

Dates and walnuts

Method – Chop the dates and walnuts. Mix the ghee and jaggery powder. Mix the flours together. Then add slowly to the ghee-jaggery powder. Add the chopped dates and walnuts. Mix well. If the mixture seems dry or crumbly you can add a tbsp or more of milk or ghee. Also if the dates are very sweet please reduce the quantity of jaggery powder.

Refrigerate it for an hour at least. Preheat oven at 160 degrees C. Cut the cookies into shapes and bake them on a baking tray for 12-13 minutes while keeping a close watch since jaggery tends to caramelize very fast and can burn.
